I rarely post recipes on here but these cookies have been such a consistent hit that I thought I’d share. They are definitely an “everyday shine” kind of a thing 😉
I was searching for a recipe that was a lighter version of a regular chocolate chip cookies – but when I made these, not only do they taste super decadent but they also have that hint of coconutty flavour that gives a simple classic a bit of a twist.
This recipe was adapted from Sweet Treats.
1/2 cup coconut oil
1 cup packed brown sugar
1 large egg
1 tsp vanilla extract
3/4 cup whole wheat flour
3/4 cup all purpose flour
3/4 tsp baking powder
1/2 tsp baking soda
pinch of salt
3/4 cup semi-sweet chocolate chips
Melt the coconut oil (I usually throw in the microwave for 20 seconds) and combine with sugar until fluffy. Beat in egg and vanilla.
Preheat oven to 350
In another bowl combine flours, baking powder, baking soda, and salt.
Slowly mix into wet mixture. Stir in chocolate chips.
Scoop by rounded tablespoon onto a cookie sheet lined with parchment paper. Bake at 350 for 10 minutes.
You’re supposed to let cool for several minutes before transferring to a cooling rack – but I can never wait that long 🙂
